Essentials Collection Ⓥ
In BBQ there are certain flavor elements that are considered to be essential. They are both recognizable in taste as well as key elements in ‘mise en place’; the preparation.
First of all, a fundamental aspect of a good BBQ sauce is the right pH level, in other words proper sourness. This helps tenderize products during marinating, gives balance to fattiness and brings brightness to the palate. Then there is sweetness. This can come from many ingredients like (cane) sugar, honey, agave etc. with the purpose of balancing the sourness and shine (glaze) to the end products. Followed by savory and umami elements to support sweetness in a counter-active way. Finally herbs and spices. They come in last -but not least- to surprise the tongue with buzzing, tingling and mesmerizing top notes.
All together; an interactive harmony of all things good in life.
